The easiest and the tastiest carrot cake that you have ever tried.

Blending all the ingredients together, putting into a cake tin and baking it to perfection. We promise you that this carrot cake will be one of the easiest and best cakes you have ever made and it doesn’t even taste like vegetables :).

INGREDIENTS

For the cake:
4 Carrots
1 Cup of oil
4 Eggs 2 Cups sugar
2 Cups self raising flour
1 Tablespoon baking powder

For the topping:
5 Tablespoons sugar
2 Tablespoons chocolate powder
2 Tablespoons butter
2 Tablespoons milk

METHOD

1- Peel and chop the carrots into large pieces and add to the blender along with the eggs and vegetable oil and blend until liquid.
2- Add the sugar and blend again until well mixed.
3- Tip the mixture into a bowl and add the flour and baking powder and stir until mixed well.
4- Line a cake tin and tip the cake mixture into the tin
5- Bake in the oven for 40 mins at 180c
6- While teh cake is baking make the topping by adding the sugar, chocolate powder, butter and milk into a saucepan and bring to a boil mixing at all times until it thickens a little.
7- Take the cake out of the oven and pour the topping over the cake whilst still in the tin. Leave to set.
8- Take the cake out of the tin and serve for afternoon tea.
